Method
 

Preparation
  1. Wash cucumbers and cut off the ends.
  2. Insert a skewer through the cucumber lengthwise.
  3. Cut even diagonal slices into the cucumber, turning to create a spiral effect.
  4. Carefully remove the skewer to reveal the spiraled cucumber.
  5. Add the spiraled cucumber to a bowl, sprinkle with salt, and gently toss to coat.
  6. Let the cucumbers sit for 15-20 minutes to draw out excess moisture.
  7. While the cucumbers are resting, mix the chili oil, rice vinegar, soy sauce, sesame oil, and sugar in a separate bowl.
  8. Rinse the cucumber slices under cold water a few times to remove excess salt.
  9. Gently pat the cucumbers dry with a clean towel.
  10. Mix the cucumbers with the prepared dressing and toss until coated.
  11. Serve immediately and enjoy!

Notes

For the best flavor, allow the salad to chill in the refrigerator for about 30 minutes before serving. Garnish with toasted sesame seeds or chopped scallions for added flair.
