  • 2 cups Fresh Spinach Chopped
  • 1 cup Cottage Cheese
  • 6 large Eggs
  • 1 cup Cheddar Cheese Shredded
  • 1 medium Onion Diced
  • 2 cloves Garlic Mince
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with non-stick spray or oil.
  3. Wash and chop the fresh spinach.
  4. Dice the onion and mince the garlic.
Cooking
  1. In a large bowl, combine the eggs, cottage cheese, salt, pepper, and cheddar cheese.
  2. Stir in the chopped spinach, diced onion, and garlic until well mixed.
  3. Pour the mixture into the prepared baking dish.
  4. Bake in the preheated oven for 30-35 minutes or until the center is set and the top is lightly golden.
Serving
  1. Once baked, allow to cool for a few minutes before slicing.
  2. Serve warm with your choice of garnishes.

Notes

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Can use frozen spinach if thawed and drained.
