Preparation
- Preheat your oven to 350°F (175°C).
- Grease a baking dish with non-stick spray or oil.
- Wash and chop the fresh spinach.
- Dice the onion and mince the garlic.
Cooking
- In a large bowl, combine the eggs, cottage cheese, salt, pepper, and cheddar cheese.
- Stir in the chopped spinach, diced onion, and garlic until well mixed.
- Pour the mixture into the prepared baking dish.
- Bake in the preheated oven for 30-35 minutes or until the center is set and the top is lightly golden.
Serving
- Once baked, allow to cool for a few minutes before slicing.
- Serve warm with your choice of garnishes.
Notes
Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Can use frozen spinach if thawed and drained.
