Dressing

Method
 

Preparation
  1. Wash the spinach and place it in a large bowl.
  2. Slice the cherry tomatoes in half and add them to the bowl.
  3. Peel and slice the cucumber and add it to the salad.
  4. Thinly slice the red onion and add to the bowl.
  5. Crumble feta cheese on top.
Dressing
  1. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve immediately.

Notes

Allow the salad to sit for 10 minutes after dressing for flavors to meld. Experiment with add-ins like nuts, fruits, or grilled chicken for variety. Keep leftover dressing in the fridge for up to a week.
