Preparation
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat until it shimmers.
  2. Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 4-5 minutes.
  3. Pour in the 4 cups of vegetable or chicken broth and bring to a rolling boil.
  4. Add the 9 oz package of cheese tortellini and cook according to package instructions, usually about 2-3 minutes.
  5. Fold in the 2 cups of fresh spinach and 1 teaspoon of Italian seasoning, cooking until the spinach wilts and turns vibrant green, about 2 minutes.
  6. Add salt and pepper to taste, adjusting based on your family’s preferences.
  7. Serve the soup warm, topped with freshly grated Parmesan cheese.
