Preparation
  1. Begin by cutting the sirloin steak into bite-sized pieces, ensuring uniformity for even cooking.
  2. In a bowl, combine room temperature butter, garlic, parsley, chives, lemon juice, Dijon mustard, smoked paprika, salt, black pepper, and red pepper flakes. Stir until smooth and well mixed. Set aside.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the sirloin pieces to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until they reach your desired level of doneness.
  3. Once the steak is cooked, reduce the heat to low and add the cowboy butter to the skillet. Toss the cooked steak bites in the butter until they are all well-coated.
Serving
  1. Plate the steak bites immediately, garnishing with extra herbs if desired, and enjoy!

Notes

Let your steak come to room temperature before cooking to ensure even cooking. Avoid overcrowding the pan to achieve a good sear. You can also freeze the steak bites for up to 2 months and reheat in a skillet.
