Preparation
- Heat olive oil in a skillet over medium heat. Once hot, add the sliced onions and cook until caramelized, stirring occasionally for about 15-20 minutes.
- Season the steak with salt and pepper. In another skillet, cook the steak to your desired doneness, about 3-5 minutes per side for medium-rare. After cooking, let it rest for a few minutes before slicing it thinly against the grain.
- Toast the sandwich rolls lightly.
Assembly
- Layer the sliced steak on the rolls. Top generously with the caramelized onions and place a slice of provolone cheese over the top.
- Place sandwiches under the broiler for a minute to melt the cheese.
- Serve warm with optional mustard or mayonnaise.
Notes
These sandwiches are best served warm. To store leftovers, wrap them tightly and keep in the refrigerator for 2-3 days. They can be frozen separately for up to 3 months.
