Preparation
  1. Heat olive oil in a skillet over medium heat. Once hot, add the sliced onions and cook until caramelized, stirring occasionally for about 15-20 minutes.
  2. Season the steak with salt and pepper. In another skillet, cook the steak to your desired doneness, about 3-5 minutes per side for medium-rare. After cooking, let it rest for a few minutes before slicing it thinly against the grain.
  3. Toast the sandwich rolls lightly.
Assembly
  1. Layer the sliced steak on the rolls. Top generously with the caramelized onions and place a slice of provolone cheese over the top.
  2. Place sandwiches under the broiler for a minute to melt the cheese.

Notes
