Ingredients
  

  • 8 oz noodles (wheat, rice, or egg)
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp honey or brown sugar
  • 2 tbsp scallions, sliced (for garnish)

Equipment

  • wok for high-heat cooking
  • pot for boiling noodles
  • Knife for chopping vegetables

Method
 

  1. Cook noodles until just al dente, drain, and rinse under cold water.
  2. Heat sesame oil in a large skillet or wok over high heat.
  3. Add protein and cook until browned. Remove and set aside.
  4. Stir fry vegetables starting with the firmest. Cook until crisp-tender.
  5. Return noodles and protein to the pan. Pour in sauce and toss until glossy.
  6. Garnish with scallions and serve hot.
