For the Salad
  • 6 ounces Leafy Greens (Spinach or mixed greens) Provides bulk and nutrition.
  • 8 ounces Strawberries - halved or sliced The star of the salad, sweet and juicy.
  • 2 Avocados - chopped or sliced Adds healthy fats and creamy texture.
  • 1/4 Cup Crumbled Goat Cheese For a tangy kick, can be swapped for feta if desired.
  • 1/4 Cup Sliced Almonds Crunchy topping that adds protein and fiber.

Method
 

Preparation
  1. In a glass jar, combine the olive oil, lemon juice, mayonnaise, brown mustard, honey, poppy seeds, salt, and pepper. Secure the lid tightly and shake until all ingredients are fully incorporated.
  2. In a large bowl, combine the leafy greens, strawberries, avocados, crumbled goat cheese, and sliced almonds.
Serving
  1. Drizzle the dressing over the salad, using just enough to coat without overwhelming the ingredients. Toss gently with tongs to keep the avocados from mashing.
  2. Transfer the salad to a serving dish and enjoy immediately.

Notes
