Fruit Layers
  • 2 ripe bananas, sliced Brings sweetness and texture.
  • 1 cup fresh strawberries, hulled and sliced Offers freshness and tanginess.
Assembly
  • 1 package vanilla wafers Adds texture and sweetness. Graham crackers work in a pinch.
  • Whipped cream for topping Use homemade or store-bought.

Preparation
  1. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt over medium heat until it thickens and begins to bubble, about 5-7 minutes.
  2. Remove from heat and stir in the vanilla extract and butter until smooth. Allow the pudding to cool for about 15 minutes, stirring occasionally to prevent a skin from forming.
Assembly
  1. In a large serving dish, layer half of the vanilla wafers at the bottom.
  2. Spread half of the pudding over the wafers, followed by half of the sliced bananas and strawberries.
  3. Repeat the layers with the remaining wafers, pudding, and fruit.
  4. Top with whipped cream and refrigerate for at least 2 hours before serving.

Notes

Serve chilled in dessert cups or jars. Garnish with extra fruit or crushed vanilla wafers. Can double the recipe for gatherings.
