Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the strawberry cake mix, softened butter, eggs, and vanilla extract until well blended.
- Fold in the white chocolate chips until evenly distributed.
- Using a cookie scoop, drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, dust with powdered sugar before serving.
Notes
Cookies shine best when warm; can be served with vanilla ice cream or whipped cream and fresh strawberries. Keep cookies in an airtight container at room temperature for up to a week. Can freeze for up to three months.
