Cheesecake Filling
  • 8 ounces Cream cheese, softened Use a dairy-free cream cheese for a vegan version.
  • 1/2 cup Powdered sugar Make your own by blending granulated sugar if necessary.
Topping
  • 1/4 cup Strawberry jam Fresh mashed strawberries can also be used for more authentic taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Slowly blend the flour mixture into the creamed mixture until just combined.
  6. In a separate bowl, mix the cream cheese and powdered sugar until smooth.
  7. Scoop tablespoon-sized balls of cookie dough onto a baking sheet and flatten slightly.
  8. Make a small indentation in the center of each dough ball and fill with a dollop of strawberry jam.
Baking
  1. Bake for 12-15 minutes, or until the edges are slightly golden.
  2. Allow to cool before serving.

Notes

To avoid clumps in your dough, ensure butter and cream cheese are softened. Chill dough for 30 minutes to firm it up, and store leftover cookies in an airtight container.
