For the Filling
  • 3-4 cups fresh strawberries, hulled and sliced Star of the dish; any berries work, but strawberries bring that classic summertime flavor.
  • ½ cup granulated sugar Helps the strawberries release their juices; less sugar can be used if desired.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a 9x13-inch baking dish, melt the butter in the oven for about 5 to 10 minutes.
  3. In a mixing bowl, whisk together the flour, ½ cup sugar, baking powder, and salt. Stir in the milk until well combined.
  4. In another bowl, combine the sliced strawberries with ½ cup of sugar and let them sit for a few minutes to macerate.
Assembly
  1. Pour the batter over the melted butter in the baking dish without stirring.
  2. Spoon the strawberry mixture over the batter, again, without stirring.
Baking
  1. Carefully transfer the baking dish to the oven and bake for 45-50 minutes or until the top is golden brown and the cobbler is cooked through.
  2. Serve warm with whipped cream or a scoop of vanilla ice cream.

Notes

Use ripe strawberries for optimal flavor. Let the cobbler cool slightly before serving—it thickens as it cools!
