Ingredients

Main Ingredients
  • 15 oz full-fat cottage cheese Provides creaminess and protein; for a dairy-free version, opt for almond or soy cottage cheese.
  • 1/4 cup honey Adds natural sweetness; substitute with maple syrup or agave nectar for a vegan option.
  • 1/2 cup strawberry protein powder Boosts protein content; skip the protein powder and double the strawberries if preferred.
  • 1/2 cup chopped strawberries Fresh or frozen; essential for fruity flavor.

Method

Preparation
  1. Add the cottage cheese, honey, and protein powder to a high-powered blender and blend until smooth.
  2. Pour the mixture into a loaf pan or any freezer-safe container.
  3. Fold in the chopped strawberries and stir to incorporate.
  4. Move the loaf pan to the freezer. For best results, stir the ice cream every 30 minutes for at least 3 hours to break up larger chunks and prevent icing.
  5. Alternatively, use an ice cream machine and follow the manufacturer's directions.
  6. Before serving, let it thaw for at least 30 minutes, as cottage cheese ice cream is rich and thick, making it tricky to scoop.

Notes

Serve in bowls or cones garnished with fresh strawberry slices or a sprinkle of granola. Store in a tightly sealed container in the freezer, ideally consume within a month.
