  • 1 cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk (or almond milk for dairy-free)
  • 1/2 cup unsalted butter, melted
  • 4 ounces cream cheese, cubed
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish lightly with butter or cooking spray.
  3. Combine the sliced strawberries with 1/2 cup of granulated sugar in a bowl.
  4. Let the strawberries sit for about 10 minutes to release their natural juices.
  5. Whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar in another mixing bowl.
  6. Pour in the melted butter, milk, and vanilla extract.
  7. Stir until you have a smooth batter.
  8. Spread the batter evenly into the prepared baking dish.
  9. Spoon the strawberries and their juices over the batter.
  10. Scatter the cubed cream cheese evenly across the top.
  11. Bake for 40-45 minutes, or until the top is golden brown and the strawberries are bubbling.
  12. Let the cobbler cool for 10 minutes before serving.
