Ingredients

Salad Base
  • 4 cups Fresh Spinach Provides a nutritious base; substitute with mixed greens if you prefer.
  • 2 cups Strawberries, sliced Sweet and juicy; feel free to replace with ripe peaches if in season.
  • 1 medium Cucumber, sliced Adds crunch and refreshment; you can use cherry tomatoes for some added color.
  • 1/4 medium Red Onion, thinly sliced Brings a mild yet sharp flavor; opt for shallots for a sweeter taste instead.
  • 1/2 cup Feta Cheese, crumbled For creaminess; goat cheese also works well for a tangy twist.
Vinaigrette Dressing
  • 1/4 cup Apple Cider Vinegar Tangy and flavorful; balsamic vinegar makes a great alternative.
  • 1/4 cup Olive Oil A healthy fat source; avocado oil can substitute for a different flavor profile.
  • 1 tablespoon Honey Sweetens the dressing; maple syrup is a good vegan alternative.

Method

Preparation
  1. In a small bowl, whisk together the vinaigrette ingredients until well combined. Taste and adjust the dressing to your preference. Set aside.
  2. In a large bowl, combine the salad ingredients, then drizzle the desired amount of vinaigrette on top. Toss to combine. Serve immediately.

Notes

Prepare the dressing ahead of time and store it in the fridge. It can last in an airtight container for up to a week. Always wash your spinach and fresh produce thoroughly before use.
