  • 1/2 cup melted butter Can substitute with coconut oil for a healthier option.
For the filling
  • 1 package cream cheese (softened) Neufchâtel cheese can be used as a lighter alternative.
  • 1 cup powdered sugar Can substitute with erythritol for a low-sugar option.
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream Can use dairy-free coconut cream if needed.
  • 2 cups sliced strawberries Fresh strawberries complement the creamy filling beautifully.

Method
 

Preparation
  1. In a bowl, combine the crushed graham crackers and melted butter until crumbly.
  2. Press the mixture into the bottom of a 9x13 inch pan to form a crust.
  3. Let it set in the refrigerator while you prepare the filling.
Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.
  3. In a separate bowl, beat the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until thoroughly combined.
Assembly
  1. Spread the cream cheese mixture evenly over your chilled graham cracker crust.
  2. Arrange the sliced strawberries on top of the cream cheese layer.
Chill
  1. Place the Strawberry Delight in the refrigerator for at least 120 minutes before serving.

Notes

To serve, cut into squares and pair with a sprig of mint. This dessert can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
