Preparation
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Wash and finely chop the strawberries, setting them aside.
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
Cooking
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- In another bowl, combine flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
- Fold in the chopped strawberries gently.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden.
Serving
- Remove the baking sheet from the oven and let the cookies cool for a few minutes.
- Transfer cookies to a wire rack to cool completely.
- Enjoy warm or store in an airtight container for later!
