Preparation
- Preheat your oven to 350°F (175°C) and grease a 9 x 13 inch baking pan, lightly flouring it.
- In a medium bowl, combine the flour, baking powder, and a pinch of salt; set aside.
- In a large mixing bowl, blend the white and brown sugars with the zest of one lime until fragrant.
- Beat in the softened butter until light and fluffy.
Combining Ingredients
- Mix in the eggs one at a time, followed by the vanilla extract and lime juice.
- Slowly add half of the dry mixture to the wet ingredients and mix until just combined, then repeat with the other half.
- Gently fold in the white chocolate chips and crushed freeze-dried strawberries.
Baking
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 21-24 minutes until a toothpick inserted comes out clean.
- Allow the blondies to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
Glazing and Serving
- Make the glaze by mixing the zest and juice of one lime with powdered sugar until smooth.
- Drizzle the glaze over the cooled blondies and sprinkle with crushed freeze-dried strawberries.
- Cut into 15 pieces and enjoy!
Notes
Use room temperature eggs for better incorporation. Don't overmix after adding the flour. Always cool before glazing.
