Preparation
  1. In a mixing bowl, combine the diced strawberries with the lime juice. Stir well to coat all the strawberries evenly.
  2. If desired, add the tablespoon of sugar. Mix well to allow the sugar to dissolve and blend into the salsa.
  3. Toss in the chopped mint, if using, for added flavor.
  4. Spoon the strawberry salsa into a bowl and serve with crispy pie crust chips.

Notes

Serve fresh for the best flavor. Store leftovers in the refrigerator and consume within two days. Avoid freezing as the texture can become mushy.
