- In a mixing bowl, combine the diced strawberries with the lime juice. Stir well to coat all the strawberries evenly.
- If desired, add the tablespoon of sugar. Mix well to allow the sugar to dissolve and blend into the salsa.
- Toss in the chopped mint, if using, for added flavor.
- Spoon the strawberry salsa into a bowl and serve with crispy pie crust chips.
