  • 16 oz Fresh or frozen strawberries Fresh is ideal for vibrant flavor, frozen can save time.
  • 0.25 cup Water Adjust based on desired thickness.
  • 0.25 cup Granulated sugar Adjust sweetness to preference.
  • 1 tablespoon Cornstarch Thickener for sauce; can substitute with arrowroot.
  • 1 tablespoon Fresh lemon juice Provides brightness; bottled works in a pinch.

Method
 

Preparation
  1. If using fresh strawberries, rinse well and remove hulls. Slice large strawberries in halves or quarters. For jam-like consistency, chop them finely.
  2. If using frozen strawberries, no need to thaw. They will take longer to reach a boil.
Cooking
  1. In a medium saucepan, combine strawberries, water, sugar, cornstarch, and lemon juice. Stir gently.
  2. Bring mixture to a boil over medium heat, stirring frequently. Allow it to boil for 3 to 4 minutes or until the sauce thickens.
  3. Remove from heat and let it cool for about 10 minutes to enhance flavors.
Serving
  1. Serve warm, at room temperature, or chilled over pancakes, ice cream, or yogurt.

Notes

The sauce can be stored in the refrigerator for up to one week or frozen for three months. Adjust sugar as desired while cooking.
