  • 1/2 tsp salt Essential for balancing flavors; go easy if watching your intake.
  • 1/2 tsp freshly cracked pepper Essential for balancing flavors.
For the Salad
  • 14 oz can fire-roasted corn (drained well) Sweet, savory goodness; fresh corn on the cob is a delightful alternative in season.
  • 2 cups rotisserie chicken (diced or shredded) Convenient and flavorful; leftover grilled chicken will work beautifully too.
  • 1/2 unit red bell pepper (diced) Adds crunch and sweetness; yellow or orange peppers are fun substitutes.
  • 1/2 unit green bell pepper (diced) Offers a fresh taste; cucumbers can also bring a cool crunch.
  • 3 tablespoons cilantro (chopped, more if desired) Adds freshness; parsley or green onions can be a suitable replacement.
  • 1 unit jalapeño (seeded and diced) Gives a spicy bite; omit or use a milder pepper for gentler heat.
  • 1/2 small red onion (minced) Enhances the savory flavor; shallots are a good substitute.
  • 1/4 cup cojita cheese (crumbled) Provides a creamy texture; feta cheese is a perfect alternative.
Optional Toppings

Method
 

Preparation
  1. In a small bowl, combine Greek yogurt, mayonnaise, garlic, lime juice and zest, and season with the spices, salt, and pepper, withholding the Tajin. Whisk until smooth; taste and adjust seasonings as needed.
  2. In a large mixing bowl, add the corn, both bell peppers, cilantro, jalapeño, cojita cheese, and the rotisserie chicken.
  3. Pour the dressing over the bowl's contents, using a spoon or spatula to mix until everything is evenly coated. If using, gently fold in the avocado, taking care not to mash it.
Serving
  1. Finish with a generous sprinkle of Tajin and, if you like, some extra cojita cheese. Serve with veggie sticks or tortilla chips.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. The flavors may intensify and become even more delicious! Freezing is not recommended due to the creamy ingredients and fresh veggies.
