Preparation
- In a small bowl, combine Greek yogurt, mayonnaise, garlic, lime juice and zest, and season with the spices, salt, and pepper, withholding the Tajin. Whisk until smooth; taste and adjust seasonings as needed.
- In a large mixing bowl, add the corn, both bell peppers, cilantro, jalapeño, cojita cheese, and the rotisserie chicken.
- Pour the dressing over the bowl's contents, using a spoon or spatula to mix until everything is evenly coated. If using, gently fold in the avocado, taking care not to mash it.
Serving
- Finish with a generous sprinkle of Tajin and, if you like, some extra cojita cheese. Serve with veggie sticks or tortilla chips.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. The flavors may intensify and become even more delicious! Freezing is not recommended due to the creamy ingredients and fresh veggies.
