Preparation
- Preheat your oven to 375°F (190°C).
- Rinse and pat dry the chicken breasts.
- In a bowl, mix cream cheese, spinach, shredded mozzarella, minced garlic, and Italian seasoning until combined.
Cooking/Assembling
- Slice a pocket into each chicken breast without cutting all the way through.
- Stuff each pocket with the cheese and spinach mixture.
- Season the outside of the chicken with salt, pepper, and a drizzle of olive oil.
- Heat a bit of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 3–4 minutes on each side until golden brown.
Baking
- Transfer the skillet to the preheated oven and bake for about 25 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before slicing.
- Serve warm and enjoy!
Notes
Use a meat thermometer to ensure an internal temperature of 165°F (74°C). You can customize the filling with sun-dried tomatoes or artichokes for extra flavor. Store leftovers in an airtight container for up to 3 days.
