Ingredients
  

Chicken and Filling
  • 4 pieces Chicken breasts Juicy and packed with protein.
  • 8 oz Cream cheese Can substitute with ricotta for a lighter version.
  • 1 cup Fresh spinach Or use frozen spinach, fully drained.
  • 1 cup Shredded mozzarella Melts beautifully.
  • 2 cloves Garlic Minced for flavor.
  • 2 tbsp Olive oil Extra virgin preferred.
  • 1 tsp Salt For seasoning.
  • 1/2 tsp Pepper For seasoning.
  • 1 tsp Italian seasoning Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat dry the chicken breasts.
  3. In a bowl, mix cream cheese, spinach, shredded mozzarella, minced garlic, and Italian seasoning until combined.
Cooking/Assembling
  1. Slice a pocket into each chicken breast without cutting all the way through.
  2. Stuff each pocket with the cheese and spinach mixture.
  3. Season the outside of the chicken with salt, pepper, and a drizzle of olive oil.
  4. Heat a bit of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 3–4 minutes on each side until golden brown.
Baking
  1. Transfer the skillet to the preheated oven and bake for about 25 minutes, or until the chicken is cooked through.
  2. Let the chicken rest for a few minutes before slicing.
  3. Serve warm and enjoy!

Notes

Use a meat thermometer to ensure an internal temperature of 165°F (74°C). You can customize the filling with sun-dried tomatoes or artichokes for extra flavor. Store leftovers in an airtight container for up to 3 days.
