Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a bowl, mix the sautéed spinach with shredded mozzarella and grated Parmesan cheese until well combined.
- Cut a pocket in each chicken breast, ensuring not to cut all the way through.
- Generously stuff each pocket with the cheese and spinach mixture.
- Season the outside of the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
- Allow the chicken to rest for a few minutes before serving to lock in moisture.
Notes
Prep the filling a day early for quick cooking. Consider using kale instead of spinach for added nutrition. You can also use lacto-free cheese to fit dietary needs.
