For the Stuffing

  • 1 cup shredded mozzarella cheese Provides a melt-in-your-mouth texture.
  • 1/2 cup grated Parmesan cheese Adds salty, umami depth to the stuffing.
  • 2 cloves garlic Essential for flavor; fresh garlic is always best.
  • 1 tablespoon olive oil A heart-healthy fat that enhances flavors.
  • 1 teaspoon Italian seasoning Elevates the dish with aromatic herbs.
For the Chicken
  • 4 pieces chicken breasts Opt for organic or free-range for quality.
  • Salt and pepper to taste Basic seasoning, but essential.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a bowl, mix the sautéed spinach with shredded mozzarella and grated Parmesan cheese until well combined.
  5. Cut a pocket in each chicken breast, ensuring not to cut all the way through.
  6. Generously stuff each pocket with the cheese and spinach mixture.
  7. Season the outside of the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
  1. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  2. Allow the chicken to rest for a few minutes before serving to lock in moisture.

Notes

Prep the filling a day early for quick cooking. Consider using kale instead of spinach for added nutrition. You can also use lacto-free cheese to fit dietary needs.
