Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the crumbled feta cheese and chopped herbs, seasoning with salt and pepper to taste.
  3. Layer several sheets of phyllo pastry on a clean surface, brushing each layer with olive oil. Cut the pastry into strips.
  4. Place a spoonful of the feta mixture at one end of each strip and roll it up tightly, sealing the edges.
  5. Place the rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg if desired.
Baking
  1. Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until golden and crispy.
  2. Remove from the oven, let cool slightly, and drizzle with honey before serving.
