For the Chicken
  • 4 pieces bone-in, skin-on chicken thighs Can substitute with boneless thighs or chicken breasts.
  • 1 cup fresh orange juice Bottled juice can be used, but fresh is recommended.
  • 1/4 cup soy sauce Use tamari for gluten-free options.
  • 1/4 cup honey Substitute with maple syrup or agave for vegan version.
  • 2 cloves garlic, minced Fresh is best, but jarred can be used in a pinch.
  • 1 tablespoon fresh ginger, grated Dried ginger can be used sparingly.
  • 1 teaspoon black pepper Adds subtle heat.
  • 1 tablespoon sesame seeds Optional, for garnish.
  • 2 pieces green onions, sliced Chives can be substituted.

Method
 

Preparation
  1. In a bowl, whisk together the orange juice, soy sauce, honey, garlic, ginger, and black pepper to create a delicious marinade.
  2. Place the chicken thighs in a resealable bag and pour the marinade over them. Seal the bag and let it marinate in the fridge for at least 2 hours, preferably overnight.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Remove the chicken from the marinade and arrange skin-side up on a parchment-lined baking sheet.
  3. Roast the chicken for 35-40 minutes, or until the skin turns crisp and the internal temperature reads 165°F (74°C).
  4. In the last 10 minutes of cooking, baste the chicken with any reserved marinade for extra flavor.
  5. Once done, remove from the oven and let it rest for 5 minutes before serving.
  6. Garnish with sesame seeds and sliced green onions.

Notes

Don’t skip marinating for a more flavorful and juicy chicken. To amplify citrus notes, experiment with zesting an orange, or add chili flakes for a spicy twist.
