- In a large skillet, heat vegetable oil over medium-high heat. Add cubed chicken and cook until browned and cooked through.
- Add bell peppers, onion, broccoli, and pineapple to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender.

- Serve the sweet and sour chicken over cooked rice.
Notes
For extra crunch, add a sprinkle of toasted sesame seeds on top before serving. Marinating chicken in the sweet and sour sauce for at least 30 minutes enhances flavors.
