  • 1 6-ounce can pineapple juice Adds sweetness and tang.
  • 1/4 cup rice vinegar Balances the sweetness.

  • 1/4 cup ketchup A classic ingredient for sauce base.
  • 3 tablespoons soy sauce Adds umami and depth.
  • 2 tablespoons cornstarch For thickening the sauce.
  • 2 tablespoons water Needed for slurry to thicken sauce.

Preparation
  1. Preheat your oven to 400°F and line a baking sheet with foil or parchment paper.
  2. Pat the chicken wings dry with paper towels. Combine baking powder and kosher salt in a bowl, then toss the wings in this mixture.
Cooking
  1. Place the wings on the baking rack set over the baking sheet. Bake for 30-35 minutes until they are crispy and golden brown.
  2. In a saucepan, combine pineapple juice, rice vinegar, brown sugar, ketchup, and soy sauce. Heat over medium until it simmers, stirring occasionally.
  3. In a separate bowl, mix cornstarch and water to create a slurry. Whisk this into the simmering sauce and continue cooking for about 5 minutes until it thickens.
  4. Remove the wings from the oven and toss them in 2/3 of the sauce. Serve immediately, accompanied by extra sauce on the side.

Notes

For maximum flavor, consider marinating the wings in the sauce for a couple of hours before baking. Use a wire rack above the baking sheet for crispiness.
