Ingredients

Dough Ingredients
  • 4 cups all-purpose flour Provides the structure for your rolls; you can substitute with bread flour for added chewiness.
  • 1/2 cup granulated sugar Sweetens the dough; maple sugar or coconut sugar can be used for a twist.
  • 1 teaspoon baking powder Adds lightness; it’s crucial for a fluffy texture.
  • 1 Tablespoon dry instant yeast Makes the dough rise; consider using active dry yeast if that’s what you have.
  • 1/2 teaspoon salt Enhances flavor; always essential in baking.
  • 1 large egg Gives richness; you can use a flax egg for a vegan option.
  • 1/2 teaspoon vanilla extract Adds a warm flavor; almond extract can also add an interesting note.
  • 1/4 cup oil or melted butter Enriches the dough; coconut oil is a great alternative.
  • 1 cup warm milk Activates the yeast; use almond or oat milk for a dairy-free version.

Method

Preparation
  1. In a deep bowl or the bowl of a stand mixer, combine flour, sugar, salt, baking powder, and yeast.
  2. In a small bowl, beat the egg with the vanilla extract.
  3. Pour the oil and egg mixture into the flour mixture while mixing.
  4. Gradually mix in warm milk until a soft, not sticky, dough forms.
  5. Place the dough in a lightly oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled.
Shaping & Second Rise
  1. Prepare baking sheets with parchment paper.
  2. Divide the dough into 12 parts and roll each into a ball, then shape each into a rope and spiral.
  3. Place the rolls on baking sheets, cover, and let rise for another 30 to 45 minutes.
Baking
  1. Preheat the oven to 350°F.
  2. Mix egg wash ingredients and brush on rolls, then sprinkle with sugar.
  3. Bake for 10 minutes, then move to the upper third of the oven for another 8-10 minutes until golden brown.
  4. Cool on a rack and serve with butter, honey, or jam.

Notes

These rolls are best served warm, perhaps alongside a cup of tea or coffee for breakfast or as an afternoon snack. Consider adding cinnamon or cardamom for extra flavor.
