Ingredients
  

  • 2 large sweet potatoes, steamed or roasted (orange flesh)
  • 8 tablespoons unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon fine sea salt
  • 1 9-inch pie crust, homemade or store-bought

  • hand mixer for blending filling smooth

Method
 

  1. Steam or roast sweet potatoes until soft. Cool and scoop out 2 cups of flesh.
  2. Roll and chill pie crust in a 9-inch pie dish. Crimp edges and refrigerate.
  3. Beat sweet potatoes with butter, sugar, milk, eggs, vanilla, and spices until smooth.
  4. Preheat oven to 350°F. Pour filling into crust. Bake 55–60 minutes until mostly set.
  5. Cool at room temp, then refrigerate at least 4 hours or overnight before serving.
