Preparation
- Preheat the oven to 350°F (175°C) and prepare the tortillas.
- Spray both sides of the tortillas with spray oil, sprinkle with salt, and prick with a fork.
- Place the tortillas on a baking sheet and bake for about 10 minutes, flipping halfway through. Bake until golden brown for an additional 3-5 minutes.
- Remove the baked tortillas from the oven and allow them to cool slightly.
- Increase the oven temperature to 400°F (200°C) for the final bake.
Cooking
- In a bowl, combine the enchilada sauce and salsa, then set aside.
- In a large skillet, brown the ground beef until crumbled. Add the taco seasoning and water, bringing it to a boil before simmering until thickened.
- Warm the refried beans in the microwave to make spreading easier.
Assembly
- Spread a layer of refried beans on each tortilla, top with seasoned beef, and place another tortilla on top.
- Spoon about two tablespoons of the sauce mixture on top and sprinkle with shredded cheese.
- Continue layering until all tortillas are used.
Final bake and serve
- Place assembled pizzas on a nonstick baking sheet and bake for about 8 to 10 minutes until the cheese is melted.
- Slice and serve with your favorite toppings.
Notes
Ensure tortillas are coated with oil for crunch. Pricking them allows steam to escape. Avoid overloading with toppings to maintain crispiness.
