A homemade version of a popular fast-food favorite, featuring crispy tortillas filled with seasoned beef, creamy refried beans, and gooey melted cheese, topped with zesty salsa and enchilada sauce.

Ingredients
  

For the pizza base and filling
  • 1 lb ground beef Provides rich flavor and protein for the filling.
  • 1 packet taco seasoning Adds spices and warmth to the beef mixture.
  • 1 cup water Helps to combine and create a flavorful sauce with the beef.
  • 6 pieces flour tortillas Acts as the base, giving a satisfying crunch.
  • 1 can refried beans Adds creaminess and serves as a hearty layer.
  • 1 cup red enchilada sauce Offers tangy richness and depth of flavor.
  • 1 cup red salsa Provides a zesty kick and freshness to the dish.
  • 2 cups shredded Mexican cheese blend Melts beautifully for a cheesy topping.
For garnish
  • 1 medium tomato Adds fresh crunch and brightness as a topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare the tortillas.
  2. Spray both sides of the tortillas with spray oil, sprinkle with salt, and prick with a fork.
  3. Place the tortillas on a baking sheet and bake for about 10 minutes, flipping halfway through. Bake until golden brown for an additional 3-5 minutes.
  4. Remove the baked tortillas from the oven and allow them to cool slightly.
  5. Increase the oven temperature to 400°F (200°C) for the final bake.
Cooking
  1. In a bowl, combine the enchilada sauce and salsa, then set aside.
  2. In a large skillet, brown the ground beef until crumbled. Add the taco seasoning and water, bringing it to a boil before simmering until thickened.
  3. Warm the refried beans in the microwave to make spreading easier.
Assembly
  1. Spread a layer of refried beans on each tortilla, top with seasoned beef, and place another tortilla on top.
  2. Spoon about two tablespoons of the sauce mixture on top and sprinkle with shredded cheese.
  3. Continue layering until all tortillas are used.
Final bake and serve
  1. Place assembled pizzas on a nonstick baking sheet and bake for about 8 to 10 minutes until the cheese is melted.
  2. Slice and serve with your favorite toppings.

Notes

Ensure tortillas are coated with oil for crunch. Pricking them allows steam to escape. Avoid overloading with toppings to maintain crispiness.
