  • 1 1/4 cups tortilla chips, crushed for a satisfying crunch as the base layer
  • 16 ounces refried beans adds creaminess and protein, making it hearty
  • 1 1/4 cups cheddar cheese, shredded melty goodness that ties everything together
  • to taste toppings (e.g., shredded lettuce, diced tomatoes, sliced olives) for freshness
  • as needed cooking spray to ensure easy release from the dish

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Coat a 9-inch square pan or a 2-quart baking dish with cooking spray.
  3. Heat the olive oil in a large pan over medium-high heat. Add the ground beef and cook for 5-6 minutes, breaking up the meat until it turns brown.
  4. Stir in the diced onion and continue cooking for an additional 3-4 minutes or until the onion becomes translucent.
  5. Mix in the taco seasoning and the can of diced tomatoes. Let it simmer for 3-4 minutes.
  6. Place a layer of crushed tortilla chips in the bottom of your prepared pan, followed by a layer of refried beans.
  7. Pour the ground beef mixture over the beans.
  8. Sprinkle the shredded cheddar cheese over the beef.
Baking
  1. Place the casserole in the oven and bake for 15-20 minutes or until the cheese is melted and bubbly.
  2. Add your desired fresh toppings and serve hot.

Notes

Prepare the layers in advance for quick assembly. Substitute ground turkey or chicken for a lighter option. Add jalapeños for a kick!
