Preparation
- Preheat your oven to 350 degrees F.
- Coat a 9-inch square pan or a 2-quart baking dish with cooking spray.
- Heat the olive oil in a large pan over medium-high heat. Add the ground beef and cook for 5-6 minutes, breaking up the meat until it turns brown.
- Stir in the diced onion and continue cooking for an additional 3-4 minutes or until the onion becomes translucent.
- Mix in the taco seasoning and the can of diced tomatoes. Let it simmer for 3-4 minutes.
- Place a layer of crushed tortilla chips in the bottom of your prepared pan, followed by a layer of refried beans.
- Pour the ground beef mixture over the beans.
- Sprinkle the shredded cheddar cheese over the beef.
Baking
- Place the casserole in the oven and bake for 15-20 minutes or until the cheese is melted and bubbly.
- Add your desired fresh toppings and serve hot.
Notes
Prepare the layers in advance for quick assembly. Substitute ground turkey or chicken for a lighter option. Add jalapeños for a kick!
