  • 1 can diced tomatoes No-salt-added versions are an excellent option.
  • 1 can kidney beans, drained Black beans can be a great substitute as well.
  • 1 can corn, drained Frozen corn works well too.
  • 2 cups beef broth Vegetable broth serves as a tasty alternative.
  • 1 cup shredded cheddar cheese Monterey Jack also complements the flavors well.
  • to taste salt and pepper Essential for flavor enhancement.
  • to taste chopped fresh cilantro for garnish (optional) A burst of brightness for presentation.

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, brown ground beef and onion over medium heat until beef is no longer pink; drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, kidney beans, corn, and beef broth.
  4. Bring to a boil, then reduce to a simmer for about 10 minutes.
  5. Add the cooked spaghetti to the skillet and mix well.
  6. Stir in shredded cheddar cheese until melted.
  7. Season with salt and pepper to taste.
  8. Serve garnished with chopped cilantro if desired.

Notes

Overcooking the spaghetti can lead to a mushy texture. Not allowing the seasoning to blend adequately during simmering may result in a less flavorful dish. For extra flavor, sauté the spices with the onions before adding the meat. You can prep the ingredients in advance, making mealtime faster.
