Preparation
  1. In a large mixing bowl, blend the pineapple juice from the canned tidbits with the vanilla instant pudding mix until completely smooth.
  2. Fold the thawed whipped topping into the pudding mixture until light and fully combined.
  3. Chill the mixture in the refrigerator for 15 minutes.
  4. While chilling, cut both red and green apples into bite-sized pieces.
Assembly
  1. In a large bowl, add the pineapple tidbits with their juice, prepared apples, mini marshmallows, dry roasted peanuts, and the chilled pudding base.
  2. Gently stir to evenly coat without mashing the fruit.
  3. If desired, top with extra peanuts and drizzle with caramel sauce. Chill until ready to serve.
