Ingredients
  

For the marinade
  • 3/4 cup soy sauce Low-sodium soy sauce works great for a healthier option.
  • 1/2 cup brown sugar (or honey) Can replace with maple syrup for a unique twist.
  • 1/4 cup mirin Mix of rice wine vinegar and sugar can be used if unavailable.
  • 1 Tablespoon sesame oil Can use canola oil for a lighter choice.
  • 1 Tablespoon minced garlic Dried garlic powder can be an alternative.
  • 1/2 teaspoon fresh ginger (grated) Fresh is always better than ground ginger.
For the chicken
  • 2 pounds chicken breasts (or thighs) Thighs provide moisture; breasts keep it lean.

Method
 

Marinating
  1. Whisk all marinade ingredients together in an 8-10 cup glass container with a lid until well combined.
  2. Place chicken in the marinade and turn to coat evenly. Secure the lid and refrigerate for at least 2 hours, up to 24 hours, flipping the chicken halfway through.
  3. Remove from the refrigerator 1 hour before cooking, allowing it to sit at room temperature.
Cooking
  1. Preheat the oven to 375°F (190°C). Coat a 9×13 baking dish with cooking spray or oil.
  2. Place the chicken in a single layer in the dish. Bake for 30-40 minutes, basting with sauce every 10 minutes, or until the internal temperature reaches 160°F (71°C). Alternatively, grill the chicken over medium heat, brushing with sauce every 5 minutes.

Notes

For a spicy kick, add chili flakes. Use leftover marinade as a dipping sauce after boiling it for safety. Serve with rice or steamed vegetables for a complete meal.
