Ingredients
  

  • 2 pounds chicken breasts
  • 1/2 cup honey
  • 3/4 cup soy sauce (use low sodium if preferred)
  • 2 tablespoons rice vinegar
  • 1/4 cup mirin
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon cool water

Equipment

  • Slow cooker for cooking chicken

  • fine mesh strainer to strain sauce
  • two forks for shredding chicken

Method
 

  1. Grease the container of a large slow cooker.
  2. Add the sauce ingredients (honey, soy sauce, rice vinegar, mirin, ginger, garlic powder, onion powder, pepper, sesame oil) to the slow cooker and whisk to combine. Do not add cornstarch slurry yet.
  3. Place chicken breasts into the slow cooker and turn to coat in sauce.
  4. Cook on low for 6 hours or high for 3 hours, until chicken is tender and easy to shred.
  5. Remove chicken and shred with two forks. Set aside.
  6. Strain sauce into a saucepan. Mix cornstarch with cool water, then stir into sauce. Bring to a boil and whisk until thickened.
  7. Toss shredded chicken with half of the thickened sauce. Serve with rice, vegetables, or salad. Drizzle remaining sauce over plated servings.

Notes

For best flavor, allow the chicken to cook low and slow. You can adjust sweetness by reducing honey or add spice with a pinch of red pepper flakes.
