Ingredients
  

For the meatballs
  • 1 pound ground chicken A lean source of protein that keeps the dish light.
  • 4 pieces green onions (chopped) Adds freshness and a pop of flavor.
  • 1 cup breadcrumbs Helps bind the meatballs and gives them a nice texture.
  • 1 teaspoon garlic powder Infuses savory notes throughout.
  • 1 teaspoon onion powder Enhances the overall flavor depth.
  • 1 tablespoon soy sauce (low sodium) Reduces overall sodium content while adding umami.
  • 1 large egg Serves as a binder to help the meatballs maintain their shape.
For the sauce
  • 3/4 cup teriyaki sauce Provides a sweet and savory glaze.
  • 2 pieces green onions (chopped for garnish) Fresh garnish that adds color and flavor.

Method
 

Preparation
  1. In a mixing bowl, combine all the meatball ingredients. Combine well until evenly mixed.
  2. Use your hands to form 1-inch meatballs from the mixture.
Cooking
  1. For air frying, preheat your air fryer to 380°F. Place the meatballs in the basket and air fry for 10 minutes.
  2. For baking, preheat your oven to 400°F. Place the meatballs on a parchment-lined baking sheet, and bake for 20 to 25 minutes.
  3. Once cooked, transfer the meatballs to a skillet, pour the teriyaki sauce over them, and cook over medium-low heat until heated through, about 3–5 minutes.
  4. Garnish with the remaining chopped green onions and serve the meatballs over cooked rice.

Notes

These meatballs are freezer-friendly and can be stored in the fridge for up to 3 days. They freeze beautifully for up to 3 months.
