  • 1 lb Ground Turkey Can substitute with ground chicken or beef.
  • 1 tbsp Olive Oil Feel free to use vegetable oil or canola oil.
  • 1 medium Onion, diced Shallots can be used for a different flavor.
  • 2 cloves Garlic, minced Fresh is best; garlic powder can be an alternative.
  • 1/4 cup Soy Sauce Low-sodium soy sauce works as a healthier option.
  • 2 tbsp Brown Sugar Honey or maple syrup can act as substitutes.
  • 1 tbsp Sesame Oil Avocado oil is a lighter alternative.
  • 1 tbsp Rice Vinegar Regular vinegar or lemon juice can be used in smaller amounts.
  • 1 tbsp Ginger, grated Fresh is ideal; powdered ginger can substitute in a pinch.
  • 1 tbsp Cornstarch Arrowroot starch is a good alternative.
  • 4 cups Cooked Rice Try quinoa for a different texture.

Method
 

Cooking the Turkey
  1. Heat a large skillet over medium heat and add the olive oil.
  2. Once the oil is hot, add the diced onion to the skillet and sauté for about 3-4 minutes until softened and translucent.
  3. Add the minced garlic to the skillet and cook for another 1 minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it up with a spatula as it cooks. Stir occasionally and cook until the turkey is fully browned and no longer pink, about 6-7 minutes.
Making the Sauce
  1. While the turkey is cooking, in a small bowl, whisk together the soy sauce, water, brown sugar, rice vinegar, sesame oil, and grated ginger.
  2. In a separate small bowl, mix the cornstarch with cold water until fully dissolved to create a slurry.
  3. Once the turkey is cooked, pour the soy sauce mixture over the turkey and stir to combine.
  4. Bring the sauce to a simmer and cook for 2-3 minutes to allow the flavors to meld together.
  5. Add the cornstarch slurry to the skillet while stirring to thicken the sauce.
  6. Continue simmering for an additional 1-2 minutes, or until the sauce reaches your desired consistency.
Serving
  1. If using, sprinkle in the red pepper flakes and stir to combine, adjusting to your heat preference.
  2. Serve the teriyaki ground turkey over the cooked rice, dividing it into bowls.
  3. Garnish each bowl with sliced green onions and a sprinkle of sesame seeds. Serve immediately while hot.

Notes

For added flavor, marinate the ground turkey in the soy sauce mixture for 30 minutes before cooking. Top with different veggies, such as bell peppers or snap peas, for extra crunch and nutrition. Make a double batch of the sauce and save it for future meals.
