Peanut Sauce Ingredients
  • 1/4 cup crunchy peanut butter Almond butter can serve as an alternative.
  • 1 tablespoon fresh lime juice Can substitute with lemon juice if needed.
  • 1 tablespoon rice vinegar Apple cider vinegar makes for a viable substitute.
  • 1 tablespoon low-sodium soy sauce or tamari Opt for coconut aminos for a gluten-free version.
  • 1 tablespoon honey Agave syrup or maple syrup can be used as substitutes.
  • 2 teaspoons toasted sesame oil Grapeseed or olive oil can be used if needed.
  • 1 clove garlic (minced) Fresh garlic paste can be an alternative.
  • 1-2 tablespoons water or coconut milk (if needed) Adjusts the sauce's thickness.
  • 2 teaspoons toasted sesame seeds Sunflower seeds can be substituted for a nut-free option.

Method
 

Preparation
  1. Use a mandolin or a sharp kitchen knife to slice the cucumbers into uniform, thin slices.
  2. Lay sliced cucumbers in a single layer between paper towels, roll them up, and set aside to remove excess moisture for a few minutes.
  3. In a large bowl, combine all the peanut sauce ingredients, and whisk until smooth.
  4. Add the cucumbers, chicken, and green onions to the bowl, tossing to coat everything in the sauce.
  5. Garnish with extra green onions, sesame seeds, and drizzle with chili crisp for an added kick.

Notes

Make the peanut sauce ahead of time for better flavor. Customize your salad by adding shredded carrots or bell peppers for extra color and crunch. Store components separately until serving to maintain freshness.
