Ingredients
  

Wet Ingredients
  • 1 cup buttermilk If unavailable, mix 1 cup milk with 1 tablespoon of vinegar and let sit for 5 minutes.
  • cup vegetable oil For a tropical twist, consider using melted coconut oil.
  • 1 large egg Acts as a binding agent; can substitute with a flaxseed or chia seed egg for vegan version.
  • 1 tsp vanilla extract Opt for almond extract for a unique flavor.
Dry Ingredients
  • cups wheat bran Rich in fiber; oat bran can be used as a substitute.
  • ½ cup light brown sugar Coconut sugar makes a good alternative.
  • 1 cup all-purpose flour Substitute with whole wheat flour for more fiber.
  • 1 tsp ground cinnamon Nutmeg can be used as a substitute.
  • 1 tsp baking powder Ensure it's fresh for the best results.
  • 1 tsp baking soda Store in a cool, dry place for longevity.
  • ½ tsp salt Balances flavors; don’t overdo it.

Method
 

Preparation
  1. Preheat your oven to 375°F. Spray a muffin tin with baking spray and set aside.
  2. In a small bowl, add the wheat bran and pour the buttermilk over it, stirring to combine. Let soak for 10 minutes for maximum moisture.
Mixing Ingredients
  1. In a large bowl, combine the oil, egg, brown sugar, and vanilla extract. Stir vigorously to blend well.
  2. In another medium bowl, mix together the flour, cinnamon, baking soda, baking powder, and salt using a fork or whisk.
Combining Mixtures
  1. Add the soaked wheat bran mixture to the wet ingredients, stirring until well combined.
  2. Gradually fold in the dry ingredients into the wet mixture until integrated.
Baking
  1. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. This recipe yields 12 muffins.
  2. Bake in the preheated oven for 16-18 minutes or until a toothpick inserted in the center comes out clean.

Notes

Allow muffins to cool completely before storing to prevent sogginess. Add walnuts or pecans for crunch. Dried fruits like raisins or cranberries can add sweetness.
