  • 1 cup diced tomatoes Ripe, seasonal tomatoes work best.
  • 1/2 cup chopped cilantro A fresh herb that elevates the taste with its vibrant aroma.
  • 1 piece jalapeño, seeded and minced Can adjust spice level by including or excluding the seeds.

Method
 

Combine and Chill
  1. In a glass or ceramic bowl, combine the diced fish and lime juice. Cover and refrigerate for about 1-2 hours until the fish is ‘cooked’ and opaque.
Prepare Vegetables
  1. Once the fish is ready, gently drain excess lime juice but leave a little for flavor.
  2. Add the thinly sliced red onion, diced tomatoes, chopped cilantro, minced jalapeño, and salt to the fish.
Combine and Serve
  1. Gently toss all the ingredients together until well mixed, taking care not to break the fish too much.
  2. Serve your ceviche chilled with tortilla chips or in taco shells.
