  • 1.75 lbs boneless, skinless chicken breasts The ideal choice for juicy grilled chicken.
  • 6 tablespoons extra virgin olive oil Adds moisture and enhances flavor.

  • 1 teaspoon dried thyme Imparts an earthy flavor.

Method
 

Preparation
  1. Pound the Chicken: Place the chicken breasts in a zip-lock bag and pound to an even 1/2-inch thickness.
  2. Prepare the Marinade: In the same zip-lock bag, mix all the ingredients, except for the chicken.
  3. Marinate: Add the chicken breasts to the bag and massage the marinade into the meat until evenly coated. Seal the bag and refrigerate for at least 4 hours or overnight.
  4. Preheat the Grill: Preheat the grill to high heat and oil the grates.
Cooking
  1. Grill the Chicken: Place the marinated chicken on the grill and cook for 2 to 3 minutes per side.
  2. Serve: Transfer the grilled chicken to a platter and let it rest for a couple of minutes before serving.

Notes
