For the Tomato Topping
  • 2 pounds ripe tomatoes Choose about 5 to 6 medium tomatoes. Ripe tomatoes burst with flavor and juiciness.
  • 1/2 teaspoon fine sea salt Enhances the natural sweetness of the tomatoes; adjust to taste.
  • 1/2 cup finely chopped white onion Adds a mild bite; feel free to swap with red onion for a sharper taste.
  • 1/2 cup chopped fresh basil Provides aromatic notes; if fresh isn’t available, you can use a teaspoon of dried basil.
  • 2 cloves garlic Pressed or minced for a punch of flavor; roasted garlic can be used for a sweeter alternative.
  • 4 to 5 tablespoons extra-virgin olive oil Use quality oil for the best flavor; avocado oil can substitute if needed.
  • thick balsamic vinegar (optional) Drizzle it on top for a sweet finish; balsamic glaze works nicely too.
  • Maldon flaky sea salt (optional) Use for an added textural contrast; table salt can substitute but without the same depth.
For the Bread
  • 1 baguette French bread Opt for fresh for a perfect crunch; ciabatta works well as a substitute if you prefer.

Method
 

Preparation
  1. Preheat the oven or a gas grill to 450°F. Line a large baking sheet with parchment paper.
  2. Dice the tomatoes and transfer them to a medium mixing bowl. Stir in salt, onion, basil, and garlic; set aside.
  3. Slice the baguette on the diagonal into 1/2-inch slices and brush both sides with olive oil.
Cooking
  1. Arrange slices on the baking sheet and bake for 6 to 9 minutes until golden.
  2. Drain excess juice from the tomato mixture, add remaining olive oil, and adjust seasoning.
Assembly
  1. Top each toast with the tomato mixture and drizzle with balsamic vinegar. Serve immediately.

Notes

Allow the tomato mixture to marinate for at least 15 minutes before serving for the best flavor. For a crowd, prepare extra toppings and let everyone create their own bruschetta. Try adding a hint of freshly cracked black pepper for an extra kick of flavor.
