Ingredients

Base Ingredients
  • 2 tablespoons olive oil Adds richness; can substitute with any neutral oil.
  • 1 small onion, chopped Can substitute with shallots for a more delicate flavor.
  • 2 cloves garlic, minced Garlic powder can be used if fresh is not available.
  • 28 ounces crushed tomatoes Fresh tomatoes or diced can also work, but simmer longer.
  • 2 cups vegetable broth Chicken broth is fine for non-vegetarians.
  • 1 teaspoon sugar Balances acidity; can substitute with maple syrup.
  • Salt and pepper to taste Essential for flavor; adjust based on preference.
  • 1/4 cup fresh basil, chopped Use a third of the amount if using dried basil.
  • 1/2 cup heavy cream (optional) Can substitute with coconut milk or non-dairy cream.

Method

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
Cooking
  1. Add the crushed tomatoes, vegetable broth, and sugar. Season with salt and pepper to taste.
  2. Bring the soup to a boil, then reduce the heat and let simmer for 20 minutes.
  3. Add the fresh basil and stir.
  4. For a creamier soup, stir in the heavy cream before serving.
  5. Serve hot and enjoy.

Notes

Common mistakes include not sautéing the onions and garlic enough, skipping the sugar which leads to acidity, and adding basil too early. Use an immersion blender for a smoother texture, and let the soup sit for an hour to enhance flavors.
