  • 1 can (400g) chopped tomatoes Fresh tomatoes can be used, but they require longer cooking time.
  • 1 unit onion, chopped Shallots can be used for a gentler flavor.
  • 3 cloves garlic, minced Adjust the amount according to preference.
  • 500 ml vegetable broth Homemade broth enhances flavor.
Seasonings
  • 1 teaspoon dried oregano Fresh oregano can be used for a more vibrant taste.
  • 1 teaspoon dried basil Italian seasoning can be used as a mix-in.
  • to taste salt and pepper Season according to your preference.
Other
  • 1 tablespoon olive oil For sautéing aromatics.
  • a handful fresh basil leaves For garnishing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic; sauté until softened.
  3. Stir in the chopped tomatoes, pasta, vegetable broth, oregano, basil, salt, and pepper.
Cooking
  1. Bring to a boil, then reduce to a simmer, cover, and cook for about 10-12 minutes until pasta is al dente.
  2. Stir occasionally and check if more broth is needed.
  3. Once cooked, remove from heat and let it sit for a few minutes.
  4. Serve hot, garnished with fresh basil leaves.

Notes

Consider adding bell peppers or spinach for added nutrition. For protein, toss in chickpeas or shredded chicken. Adjust spices and seasoning for personal preference.
