Method
 

Preparation
  1. In a bowl, combine red onions, halved cherry tomatoes, and chopped fresh basil.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Maldon salt, black pepper, and dried oregano until well combined.
  3. Pour the dressing over the tomato and onion mixture, stirring to ensure everything is well coated. Cover and let it marinate at room temperature for about one hour.
  4. Cut the peaches into thin wedges.
  5. Stir the peach slices into the bowl with the tomatoes, ensuring they are coated with the dressing.
  6. Arrange the marinated tomatoes and peaches on a serving platter.
  7. Break the burrata into 4-5 chunks and place them on the platter among the tomatoes and peaches.
  8. Sprinkle the salad with chopped chives and additional basil for a fresh touch before serving.

Notes

Use ripe, in-season peaches and tomatoes for maximum sweetness and flavor. Add nuts for crunch if desired. Keep burrata separate until serving to maintain its creamy texture.
