- In a small bowl, combine the mayonnaise, Parmesan cheese, fresh minced garlic, Dijon mustard, and anchovy paste.
- Mix thoroughly and taste, adjusting flavorings as preferred, adding salt and pepper if needed.
Assembly
- Spread the mayonnaise mixture evenly on one side of each of the two large slices of whole wheat sandwich bread.
- Top the bread with the tomato slices, ensuring even coverage.
- Place the second slice of bread on top to close the sandwich.
- Cut and serve immediately.
Notes
For best results, use ripe tomatoes and consider salting the slices to draw out moisture. You can make the mayonnaise mixture ahead of time.
