Method
 

Preparation
  1. In a small bowl, combine the mayonnaise, Parmesan cheese, fresh minced garlic, Dijon mustard, and anchovy paste.
  2. Mix thoroughly and taste, adjusting flavorings as preferred, adding salt and pepper if needed.
Assembly
  1. Spread the mayonnaise mixture evenly on one side of each of the two large slices of whole wheat sandwich bread.
  2. Top the bread with the tomato slices, ensuring even coverage.
  3. Place the second slice of bread on top to close the sandwich.
  4. Cut and serve immediately.

Notes

For best results, use ripe tomatoes and consider salting the slices to draw out moisture. You can make the mayonnaise mixture ahead of time.
