Ingredients
  

Salad Ingredients
  • 4 cups Fresh Spinach Can substitute with kale for added texture.
  • 2 cups Ripe Tomatoes Cherry tomatoes work wonderfully too.
  • 1 cup Cucumber Any other mild vegetable can work in a pinch.
  • 1 cup Feta Cheese Swap with goat cheese for a different flavor.
Dressing Ingredients
  • 3 tablespoons Olive Oil Avocado oil can be used for a buttery twist.
  • 2 tablespoons Lemon Juice Apple cider vinegar is a good alternative.
  • to taste Salt and Pepper Use fresh herbs for added flavor.

Method
 

Preparation
  1. In a large bowl, combine all salad ingredients.
  2. In a small jar, add all dressing ingredients and close tightly with the lid. Shake vigorously until combined.
  3. Just before serving, drizzle salad with dressing and toss until evenly coated.

Notes

Store the salad and dressing separately to keep ingredients fresh. Best when served fresh but can be stored in the fridge for up to two days.
