Method
 

Preparation
  1. In a large pot, brown the sausage over medium heat until fully cooked.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, then add the carrots and mushrooms.
  4. Bring to a boil, then reduce heat and simmer for about 10 minutes.
  5. Add the tortellini and cook according to package instructions.
  6. Finally, stir in the spinach until wilted.
  7. Season with salt and pepper, and serve hot, topped with Parmesan cheese.

Notes

Serve with a sprinkle of Parmesan cheese on top, along with homemade garlic bread or a simple salad. Store leftovers in airtight containers in the refrigerator for up to three days or freeze for later.
