- In a large pot, brown the sausage over medium heat until fully cooked.
- Add the onion and garlic, and sauté until the onion is translucent.
- Pour in the chicken broth and diced tomatoes, then add the carrots and mushrooms.
- Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Add the tortellini and cook according to package instructions.
- Finally, stir in the spinach until wilted.
- Season with salt and pepper, and serve hot, topped with Parmesan cheese.
Notes
Serve with a sprinkle of Parmesan cheese on top, along with homemade garlic bread or a simple salad. Store leftovers in airtight containers in the refrigerator for up to three days or freeze for later.
