  • 1 medium to large sweet potato Provides natural sweetness; can be substituted with squash.
  • 1 lb ground turkey Lean protein; can substitute with chicken or beef.
  • 1 clove grated garlic Adds flavor; fresh or jarred works.
  • 1 medium white onion Finely diced; shallots can be used as alternative.
  • 1 teaspoon mixed dried herbs e.g., Italian blend; customize based on preference.
  • teaspoon sea salt Adjust based on dietary preferences.
  • ½ teaspoon white pepper You can use black pepper as well.
  • 1 teaspoon turmeric powder Optional; omit if not preferred.
  • a pinch nutmeg Optional; substitute with cinnamon if desired.
  • 2 tablespoons tapioca flour or cassava flour Helps bind ingredients; can substitute with regular flour.

Method
 

Preparation
  1. Precook the sweet potato by boiling cubed sweet potato in a pot with boiling water and ½ teaspoon of salt for 10-12 minutes until soft. Strain and set aside to cool.
  2. Preheat the oven to 400°F (200°C).
Making the Patties
  1. In a bowl, mash enough sweet potato to pack tightly into 1 cup. Combine it with ground turkey, garlic, onion, dried herbs, salt, white pepper, turmeric, and nutmeg.
  2. Add tapioca or cassava flour and mix thoroughly to thicken the batter slightly.
  3. Line a flat roasting tray with baking paper and brush lightly with oil. Wet hands, roll the mixture into small patties, and place evenly on the tray.
  4. Bake the patties for 25-30 minutes without turning until browned on the bottom and golden on top.
  5. Allow the patties to cool before transferring to a container for refrigeration.

Notes

Serve warm with greens or wrapped in tortillas. Can store in the refrigerator for up to 4 days or freeze both uncooked or cooked patties.
