Ingredients

Meatball Ingredients
  • 1 tablespoon extra virgin olive oil Adds flavor and helps prevent sticking; feel free to use avocado oil for a neutral taste.
  • 1 large egg Acts as a binding agent; you can substitute with a flax egg for a vegan option.
  • 3 ounces baby spinach, chopped Offers a nutritious boost; substitute with kale if preferred.
  • 3 pieces scallions, finely sliced Provides sweetness and crunch; yellow onions can also be used.
  • 3 cloves garlic, minced Enhances flavor; garlic powder can serve in a pinch.
  • 1.25 pounds ground turkey A lean protein; swap with ground chicken or even beef for richer flavor.
  • 1.25 pounds Italian turkey sausage, removed from casings Infuses an amazing flavor; can substitute with chicken sausage or omit for vegetarian meatballs.
  • 1 cup shredded mozzarella Melts beautifully; feel free to use dairy-free mozzarella for a lighter option.
  • 1/3 cup grated Parmigiano Reggiano Adds a salty richness; replace with Pecorino Romano or omit for a dairy-free version.
  • 1/2 cup Italian seasoned bread crumbs Creates a nice texture; use panko for a crispier finish.
Sauce
  • 1 jar (24 ounces) marinara sauce Perfect for dipping; any favorite store-bought or homemade sauce will delight!

Method

Preparation
  1. Preheat the broiler and set an oven rack on the second-highest rack. Line a baking sheet with heavy-duty aluminum foil and grease with olive oil.
  2. In a large bowl, beat the egg, then add the chopped spinach, scallions, and garlic. Stir until well combined.
  3. Add ground turkey, Italian sausage, mozzarella, Parmigiano-Reggiano, and bread crumbs. Mix until evenly combined—don’t overmix!
  4. Shape mixture into 1.5-inch balls and place on the prepared baking sheet.
Cooking
  1. Broil meatballs for about 10 minutes until golden brown and cooked through.
  2. Meanwhile, heat marinara sauce in a large pan on the stove.
  3. Add broiled meatballs to the sauce and let simmer over low heat for 5 to 10 minutes or until fully cooked.
  4. Serve warm and enjoy!

Notes

For extra flavor, add Italian herbs such as oregano or basil to the meat mixture. To keep leftovers fresh, store in an airtight container. For crispy meatballs, roll them in more breadcrumbs before broiling.
